CUERNO opened this year with rich and filling paellas, entrees that manage to nod both to the modern and the traditional cooking of Spain, and wonderful drinks (the white sangria is a must). Try anything from the plancha grill and be rewarded with the intense flavors of garlic, olive oil and fresh seafood cooked perfectly. less...

You can hit a tapas restaurant practically anywhere in town these days, but none are as true to the Spanish vision as KROG BAR in the parking lot of Stove Works, which Kevin Rathbun opened as an adjunct to his eponymous restaurant. What makes Krog Bar so authentic? For one thing, it’s tiny and there’s a heavy emphasis on wines, just as you’d find in Sevilla, where the most popular tapas bars are so packed they incur involuntary frottage. Also, Rathbun focuses on simple quality — the best Serrano ham, the best cheeses. We should mention that all items are cold and not all are Spanish. The place is too small for any kind of cooking. But if you want a quick transit to southern Spain, this is the place. less...

Hey, do y’all know where the tapas craze originally came from? They were invented by the Spanish as an inexpensive taste to accompany wine. There are classic, straightforward tapas — a taste of serrano ham, for example — but tapas are often playful experiments, too, and thus also reflect contemporary tastes. The closest we get to real Spanish style is PURA VIDA. Chef Hector Santiago’s menu is pan-Hispanic as well as Spanish, including everything from earthy Peruvian mofongo and Chilean salmon ceviche to Spanish omelets with pearl onion confit and a kinky Mex-style shrimp cocktail with calabaza squash and coconut-ginger habanero sauce.

Depends on which street corner you happen to be on, doesn't it? Few culinary crazes have overtaken our city as thoroughly. We don't expect them to be authentically connected to Spain anymore. They just need to be small plates served by people who trill their R's. Whatever. We're heading to PURA VIDA these days. This restaurant has turned into a festive celebration of Latin culture with events throughout the week, but the menu - heavily influenced by Puerto Rico - has gotten better every month. Rich duck layered with sweet plantains and hanger steak in chimichurri sauce are among our faves. The mofongo is an earthy joy. Don't ask. Just try it. "656 N. Tapas are everywhere now but the best in town emerged this summer when NOCHE converted its menu of Southwestern cuisine to small plates of authentic Spanish and Mexican dishes. The crowd is hellaciously loud in this small restaurant that does a heavy bar business, but it's all perfect for a cuisine traditionally served in crowded Spanish cafe bars. Two don't-miss dishes are the white anchovies and onion salad on toast and the sauteed spinach with dried cranberries and pine nuts. Ditto for the spare ribs. Portions are more generous than usual and nothing costs over $5. "1000 Virginia Ave., 404-815-9155. www.heretoserverestaurants.com" less...

Chef Nancy Delgado Mathews (gone of late) transformed the always good ECLIPSE DI LUNA into something extraordinary. The tapas are so far beyond any others in Atlanta - in terms of authenticity and creativity - that they set a standard. Besides dishes like simple serrano ham, you'll find a roasted lamb sandwich with mint aioli, an empanada stuffed with chorizo, coriander-encrusted scallops with roasted garlic and white-bean puree, and many vegetarian choices. Wonderful ambience and good music. (Mathews recently left due to family illnesses.) "764 Miami Circle. 404-846-0449. www.eclipsediluna.com." less...

Unlike most tapas bars in this city, Andaluz takes its inspiration from the authentic tapas cuisine of southern Spain. You can have manchego cheese and serrano ham.
