Mouthful - Chinese noodles

FRANK MA SOUTH: The renowned Frank Ma resurfaced as a consultant at the newly opened “Frank Ma South” after leaving his post at Frank Ma’s. Despite a slightly rocky start (he shares the space with another restaurant and isn’t on site on Tuesdays), his “special sauce noodle bowl” is as good as ever and some of the best comfort food around. A big bowl of fat white noodles are topped with a sweetish mixture made from black-bean and hoisin sauces, ground pork, dried bean curd and green onions. 2088 Briarcliff Road. 404-320-7373.

MING’S BAR B Q: This little restaurant in the Asian Square shopping center continues to be a Buford Highway favorite, with good reason — it has some of the most delicious honey-roasted pork around. The best vehicle for the pork is the “Honey Roast BBQ Pork Fried Noodles,” al dente egg noodles stir-fried with green onions and a generous serving of pork. Another notable dish is the “Chow Fun with Beef” (ask for it dry-fried), a plate of wide noodles mixed with tender chunks of beef and bean sprouts. 5150 Buford Highway, No. C-300, Doraville. 770-451-6985.

CAFÉ 101: No visit to this Taiwanese restaurant serving a large variety of Szechuan dishes is complete without an order of “Szechuan Dan-Dan Noodle.” Every cook prepares this classic dish differently. Some are wildly spicy and numbing. Others — such as the version at Café 101 — are more subtly flavored with a simple combination of sesame oil, chili oil and sesame seeds. The fresh-tasting noodles are medium-sized and have a pleasant chewiness that juxtaposes nicely against the crunch of boiled watercress. 5412 Buford Highway, Doraville. 770-458-8883. www.cafe101atlanta.com.
