The recipe for this winter ale changes each year, but the emphasis is on an earthy, malty ale with a hint of spice. This year’s version is chestnut brown with a maple and vanilla-oak sweetness, backed with a solid, grassy hop bitterness. Cinnamon and nutmeg are there, but are never overpowering. A dry, woody finish and low carbonation gives it a wine-like mouthfeel. Serve it in a wine glass at Christmas dinner instead of that cheap merlot you got at Kroger.
