Historians believe pizza is an ancestor of the flatbreads once consumed by ancient Egyptians, Greeks, and Romans. Around the 18th century, the flatbreads — often topped with ingredients such as cheese, garlic, anchovy, and tomato — emerged as a common staple for Naples’ poor. It wasn’t until the early 1900s that Americans noticed, and ultimately fell in love with, the dish Italian-American immigrants had been eating for years.
